If you're homeschooling because of this craziness I recommend Rocketbook. The paper can be wiped clean and is great for cutting down on waste. I've been writing math lessons in their notebooks, scanning and erasing.

l use the 'scan' feature in the app to send copies of my plans to supervisors and co-teachers each week. Teachers are responsible for so much record keeping and my Rocketbook leaves everything searchable and on my drive so I don't have to dig through files to find things when needed.
