Cindy's Cranberry Mousse
Ingredients:
- 1 20oz Can crushed pineapple, drained (reserve juice)
- 1 6oz Package of red gelatin (any flavor works, but I like raspberry or strawberry)
- 1 Cup Water
- 1 Can Whole berry cranberry sauce
- 3 Tbsp Lemon juice
- 1 Tsp Lemon zest
- 1/4 Tsp Nutmeg
- 2 Cups Sour cream
- Optional: 1/2 Cup Chopped pecans
Instructions:
Add reserved pineapple juice to gelatin in a saucepan. Add water and heat to combine, stirring until gelatin is fully dissolved.
Remove from heat and blend in cranberry sauce, lemon juice & zest, and nutmeg.
Transfer to a bowl and chill until slightly thickened (consistency similar to egg whites).
Remove from fridge and blend in sour cream, and fold in the crushed pineapple and chopped nuts, if using.
Pour into a greased 2 quart mold and chill until fully set - ideally overnight.
